for quality fruit or nut trees, they grow full quality seeds in a few short days and can be replanted right away, and they get a lot of seeds. a good option is walnut, which also gives a reasonable amount of wood. the wood trees only give seeds when they're at about 98% growth, which means much slower progress but also more chance to stunt before becoming seed bearing, possibly stunting the entire operation.
as said above spruce or pine for bough and tar, and for purely wood king's oak is the best choice. mulberries and apples are a given.
for cosmetics you may want to add plane trees, with spruce you have both dark and light outer and inner textures (they are opposites). pine is the standard wood colour (like palisades). personally i think the nutwood colours are also very nice, as well as conker (sort of gray).
