I think it can eat what items you will feed it. Whatever you do not want to eating can be good.

i do a large field for beetroots + leaves, harvested every couple days, plus large field of pumpkins harvested every week or two? (whatever speed they grow), extra seeds from hemp/tobacco/lettuce since they have no other use, spare straw if we don't make it all to straw dolls

beets > carrots because they give the leaves which is +1 fodder per tile over carrots

I've always fed my livestock on beets, as the others say, it gives the best returns, I feed my chickens on excess seeds though.

Actually, spare hemp seeds should be replanted. If you are smart enough, you'll harvest HALF your hemp on stage 4 (hemp buds) and the other half on stage 5 (seeds and fiber), the the stage 5 seeds will cover up the stage 4 harvest.

So, best thing to feed is still beets. They'r easy to increase Q, low harvest time, and you get the extra leaves.
