Harvesting one carrot

I've learned plant lore + gardening, why do I harvest only one carrot? Or those skills affect only harvesting seeds?

Maybe you harvest them to early?
Wait till they have bloomed (the stage where you get seeds is over), then you'll get more.

well, I cannot know this, I didn't see bloomed or full grown carrot in new HnH.
But it almost 2 days have passed since I planted carrots. The diameter of carrot on the ground is almost as the length of female's foot. I'm guessing it's final stage of growth.
Btw, I planted carrots without having Plant Lore & Gardening learnt.

Only affects at harvest.

They grow faster with a beehive.

with a beehive its about 30hours for full growth cycle of carrots, about 26hours for the seed stage

Not how it works. Farming stat effects quality of crops and some craftables, not amount of crops harvested.
