What am I doing wrong with these chickens?

I have food, I have water, and I have chickens in there, why have they not produced any eggs overnight?

Give them more time. They start the breeding cycle after a day or two since they've been caught.

Probably a mechanic put into game to prevent people from getting free eggs by dumping wild chickens into coops without fodder.
