You can indeed fully block a mammoth hit, my armor is just about good enough at 150/130 but I still take about 15-20 armor damage. If I were using a steel plate instead of CTC I'd probably take zero. Of course, it's obviously easier with better stats than 50/50 though. Like any other animal you just need to punch and chop/sting/cleave until it dies, ride a horse so you can chase when it runs or trap it in.
To fight a mammoth before I had enough armor to tank it though I'd just use parry and yield ground with steal thunder and cleave, yield ground to build its ip to use steal thunder.

Using a q112 Bronze Sword.
At this point, I have no problems fighting Mammoths. When I do accidentally screw up for a moment, it deals something like 44 armor damage (taking into account my AC [59/60], that is just over 100 damage when including fully soaked damage). (Do note that I have three blocks in my moveset, and I need all three of them against mammoths.)
I've heard rumors about them having a ranged attack, but I haven't experienced it myself. I make sure to be close enough when aggroing and make sure they can path to me just in case that causes them to do unexpected things like using ranged attacks.
They seem to move at around horse speed 3 (careful: not hearthling speed 3, horse speed 3). I think they're a tiny bit faster, but not entirely sure.
While we're on the subject of powerful animals, does anybody know how much stronger Trolls are compared to Mammoths, and if they use their cave-in attack if you're not trying to block them/use other lame tricks? I want to know if I should fight them if I ever encounter one, or if it would be plain suicide.
