Dash + Artful Evasion (and perhaps Zig Zag) are likely the most useful defensive skills that you need, it will help you a lot if you can to build some IP from a distance when you begin the taming process so that when you're actually fighting it you can focus more on the animal's openings and know that you have enough IP to manage your own openings using dash and artful evasion. Put on oak stance for better defense and less weight to your punches.

Also, I thought that they all need to be beaten just 3 times. But one q~50 mouflon was tamed after 3 fights and another q94 one after 3 fights is still wild. Maybe it has nothing to do with Q and just random but for further taming I would choose lower q animals. They all will be q 10 after taming anyway. And Q94 would be better to kill for the hide and bones.
