Trellis question

Sorry for all the questions lately, but I cant seem to find the answers anywhere else.

When I harvest my grapes or peppercorn, I notice the stalks remain. Can I remove them to plant higher quality grapes or must I destroy the trellis to remove the old lower quality stalks?

Use destroy on the plant graphic itself, you get a digging animation.
