How is it that all these formulas are known? Is there a way to determine them in game or something? Or do devs just tell the forumla for items after some time?

Testing. If you're referencing the wiki, be aware that some number of them are likely inaccurate.

There is some theorycrafting involved in some cases and even the best hypothesis comes out wrong. Some things have been a real pain in the ass to figure out over the years because of the number of inputs and possible modifiers.

And then we have beehives.... couldn't figure them out for six worlds, someone is finally bored enough to apply science and nail the mechanics perfectly... boom, devs change the mechanics on us.
