Correct way to cheese

What am I doing wrong to make cheese result in only making generic goda? I've placed racks in cellars, mines, and outside and every time I only get generic goda.

You're letting it stay on racks too long.

Dont listen to Potjeh, he's out of his element.

Your problem is - you're using mixed milk (even 0.01 of mixed milk left in tub will contaminate 100l of pure cowsmilk).
Rebuild the curding tub and only use 100% clean sheep OR cow milk.
Otherwise you'll only get gauda.

Check if you get "cow's curd" sheep's curd" or generic "curd"

Yes, there are different types of cheese for Cow's Milk and Sheep Milk. Aurochs milk always gives generic curd, I think.

This page on the wiki details the different types of cheese and how to achieve them - but the basic thing is: resting time on different environments (inside house, cellars, mines and outside).

Yeah, auroch's milk is "generic" for the purpose of all recipes. If you want specific cheeses, you need to tame a cow and/or sheep and milk them (and as posted previously, not mix the tubs.)
