My hide won't turn into leather. I've already put it on a tanning rack and in a tanning tub.

In order to make leather in a Tanning Tub, you have to follow the steps below. Leather isn't exactly hard to make, but it is a time-consuming process.

Acquire a raw hide.
Dry the hide by placing it in a drying frame.
Wait 8-24 real-time hours for the hide to finish drying.([Verify] duration)
Take the dried hide and place it in a tanning tub.
Fill a bucket, using either a well or an open water source.
Obtain a piece of treebark from a tree.
Right-click the treebark on the bucket or tanning tub full of water to add it.
Keep adding bark until the concentration meter is at least 5%.
Wait 30 real-time hours for the hide to turn into leather. When this happens, the hide on the tub sprite will turn a more pronounced shade of brown.
Retrieve your finished leather.

Each tub can hold a maximum of 4 inventory spaces of hide at a time, ie 4x Rabbit Fur, 2x Fox Hide, or 1x Aurochs Hide. The amount of leather you get is equal to the filled spaces. Tanning Fluid is consumed per created unit of leather.

you put water and then bark in until water turned brown?

Simple way to fill a tanning tub: make barrel, carry barrel to open source of water, right click water. Return to hearth. right click tanning tub. This fills the tub from the barrel directly. Now place exactly 4 pieces of bark in it (might be 5) to get a minimum of 5% concentration. (note that this method of using a barrel works for pretty much everything with liquids in it--cauldrons, chicken coop/rabbit hutch, extraction press, etc. You can also carry a barrel and drink from it.)

Once you start getting advanced in the game and have high quality trees, you can raise the concentration by using up to double the amount of bark to improve the quality of the tanning fluid, which influences the quality of the leather.

Even more simple way to fill tanning tub:

Lift tanning tub
Rightclick well / open water
Put full tanning tub down again.

To tan something:

Get several pieces of bark in your inventory
Pick one up
Hold shift and rightclick the tanning tub until you can't put any more in (you start getting the stockpile icon instead of having one of the pieces of bark disappear into the tub)
Put a hide / up to four small hides into the tub
Wait until tomorrow
If necessary, wait until the day after tomorrow.

Is your tanning tub on a personal claim? Sometimes leather left in a tanning tub on unclaimed land will disappear or be replaced with a freshly-dried hide.
