What should my agil and uac be at before I fight them?

Don't fight them, ride over them with a horse - kills them instantly.

Yeah, the poison wound isn't worth the fight. Use clover on a wild horse to ride it if you haven't tamed one yet.

I've killed several with UA 30, MC 35 and never taken a hit. They're pretty easy to kill.
