What do I use these attributes for?

I'm trying to look more into attributes and what I eat, and I have a hard time understanding a couple of things:

Charisma. I've noticed A LOT of foods give charisma in some way. According to the wiki, it's used for villages, bonfires, party members and "Affects reward from quests".
This last quote is what confuses me: how is it affected? Does having 10 or 20 CHA make any difference, or is it something that I would only notice after having hundreds of points in it?

Will. "Will is intended as a measure of the character ability to force himself through the roughs and toughs". What does this mean? Is it linked to wounds or health in any way?
From my (noob-ish) point of view, Will is useless unless you plan on catching some rare fishes.

Psyche. Is it used for anything else other than fancy jewels and silk? It says "Affects the crafting of specific items, as well as all items that uses silk": does this include the crafting of silk thread and silk clothes?

First, you need a bit of math. All multipliers in the game are thus: square root ( x / 10 ). In some cases, it gets a bit more complicated than that, especially in combat if you're comparing skills or such

For quests, a CHA of 90 gives you quest rewards 3x higher than a person with CHA 10. For other benefits, I'd suggest looking up specific wiki pages for details. My memory on such matters is a bit dated on exact mechanics and formulas.

Will is... more or less useless? There are some very specific areas of the game it does have an effect, otherwise you have summed it up correctly. Will and Lore are recent additions to the game and really haven't been fleshed out much in different game mechanics.

And you summed it up for Psyche. It's an end game stat for crafting.... if you can't raise your other stats so you won't softcap your goods. You should be able to get your STR, DEX, or other relative skill/attributes up high enough, though, to not really need a lot of PSY. (Do note that the geometric mean is used, so any amount you can get PSY up significantly decreases how high the other stats are needed.)

Will and Lore used in enough amount of crafting to not be considered useless at all.

A lot of stats are just filler crafting stats that become useless after you reach the crafting quality cap needed.
