Un-Hitch a tamed animal?

I tamed a sheep... wanted to move them to a different pen, so I roped them and hitched them to a post in another pen...

how do I unhitch them from that post and let them wander in the pen?

Leash them with the rope and then drop the rope.

That or when the animal is leashed you can right click the rope it's leashed to in your inventory and click unleash.
