The quality of the corpse is always hard capped by your survival when you make the killing blow. When butchering, the quality is further soft capped by your stone axe. Hard caps limit the quality directly relative to the associated skill(s), while soft caps limit the quality relative to the average of the starting quality and the soft cap value. If you butcher a fox corpse of quality 20, but you only have a stone axe of quality 10, the hide, meat, and guts will be quality 15 (soft capped by tool quality, average of 10 and 20) and the bones will be quality 20 (equal to the quality of the corpse).
While a boar has a minimum quality of 30 while alive, the quality of the corpse is hard capped by your survival.
