If you get them at the seed stage, carrots are great and grow fast.

Bring the trough to the field, hauling pumpkins isn't an issue that way.

spare troughs on a cart, 1 wheelbarrow. fastest way to run through large fields except when dealing with seed crops, then it's barrels on a cart.

this is best lazy man way. Best quality is gonna be turnips in seed stage but if you want to be lazy and not care about quality pumpkins are the way.
