Am I able to close/hide every UI piece on the screen? I know there is collapsing menus and map, but I also went the collapsed menu gone, including the character information top left.
Similar to other games having screenshot mode for example.

I don't know the default keybind, might be Space.
You can check/change it in Options -> Keybindings -> Toggle UI

It's actually left unbound by default. It used to be Space (before we added customizable bindings), but lots of people accidentally hid their UI and were confused by it.
If a screenshot without UI is all you want, then the built-in screenshot tool has an option for completely hiding all UI just for that screenshot.
