Horses in Combat Help

Hey so I'm kind of new to horses in combat and I've almost died cause someone stalled my horse. I know now they suck in combat situations but wanted to know what my opponents did to me, cause I'm still confused. The first incident someone pulled me off or I fell of and my horse galloped away and the other situation I was stuck on my horse while it panicked in place. What moves did they use both times to accomplish this and for the second one why couldn't I dismount?

complete side note if your new to the game and living near super hostile players you may wana move somewhere else look for an unmapped area on the world map rush a claim and palisades and you should be good for a while
