How do I hide all of UI in default client?

You can't.

Best you can do is:
1) Options -> Keybindings -> Toggle UI (I thinkit has no keybind by default)
2) Toggle chat (CTRL+C by default I think, or the button on the right side of the action bar above the chat)
3) Go to your quest log and deselect your currently selected quest (click on it again)

You are now left with:
- 2 tiny buttons, one in the bottom left corner, one in the bottom right corner of the screen,
- the action bar which can't be hidden.
