Searching for Squab on the wiki leads only to Rock Dove Squab, which says it turns into a Bloody Mess when trying to butcher. Exactly which items are in the Squab Meat category? ty

Sounds like a bug - the entire (unbutchered) squab is used as a cooking ingredient. You can try offering a live squab in case it's accepted.

you can use the whole squab as meat for any meat recipies.
the item squabmeat, itself only dropps from badger and fox dungeons.

in past worlds, this was one of the best meats in the game, usually better than seal, right between chachalot and troll.
but you cant really produce it with consistency or quantity given how dovecotes function

do some fox dungeons, it spawns there somewhat regularily
