Maybe all coops count as q0 :D.

Do we know if the quality of the coop even matters? Did i miss that info somewhere, by chance?

Coop qualities shouldn't matter.

Thus, if i wasn't wrong about the inner workings, the issue is either in the values provided for the check of the quality of the food eaten/water drank by the chickens, or in the check itself. I'll disregard the latter, as you'll probably have checked it.
Let's go in order. That's the best way to tackles issues like this imho.
I assumed that the game stored an average of the qualities of the food we've put in the coop. Is that right, or does it store all the food data instead to use them one by one?
I assumed it is the first, and i can't see it working any other way for the water.

If that's the case, then either the values are changed when they're inputted in, or the calculation of the average values is wrong.
I'll go for the latter, as i can't think of a way for the first to go wrong. Maybe some value doesn't get correctly averaged, and just drop? The error could be either in the formula used for the food or for the water, as both of them need to be over 10q in all the categories for the chickens not to drop in quality. Could be something like a weighted average gone wrong?

Chickens where all Q10 yesterday...

We had our coop for 2 days now and the chickens only decayed to around q9-8, the difference I can see from your coop is that we didn't fill it so much with food and water, we have like 30% food and 20% water meters full. Maybe it has something to do with those values?
Edit: Also water q was 40/41/15 and food was shitty leaves around q8
