This seems like a slam-dunk obvious kind of thing for the region we're drawing mythlore from so I have to assume this wasn't done already because it collides with wine and beer, and/or provides booze (which used to give buffs and handle travel fatigue) too 'early' (though not really earlier than beer, frankly).
to give Mead a niche, I think it should use honey and water, ferment quicker than wine and beer, but also spoils and rapidly (8 RL hours or so). This isn't truly mead but rather is reflective of honey beer.
If you wanted both honey beer (true Mead) and honey wine (what most people think of when they think of mead), the later could ferment from seeds of grape, but take longer and not spoil. Player behavior would probably mean that honey wine would trail wine in quality as it was using cast-off quality seeds (recrement of grape or whatever other fruit) would follow.
And while we're on the subject, if you need more booze for satiation reductions, giving us Alembics from Glass, Clay, or Metal and letting us distill wine down to brandy (and opening a door for a path to whisky) would be cool. True distillation is a middle-ages invention, but alchemists were there as early as 1500BC.
Wine should also have First Aid/Medicine outlets. Historically it was used because it does a great job at infusing from various herbs. Perhaps it could be used as a quality booster for crafted medicines, an optional, but useful ingredient? (Basically give it +20 quality and let it roll into the quality equation to lend that boost)
