Make trees resemble animals breeding system.

I mean hide quality, meat quality, etc

something like Like
Fruit bearing = the amount of seeds you get from them.
Size = how much wood you get.
Growth speed = how fast they grow.
Quality bonus wood = % bonus to planks and blocks
Fruit food bonus = % bonus quality when making food out of the fruits.
Sap quality bonus (only for maple and birch)

The bonus could be +/-1 from the parent tree and only visible from growth 25% or higher, also an extra skill or credo should be required to view these qualities.
This would make tree farming so much more interesting.

The bulk number of trees you need to plant would make this unpleasant.

With the mid game stage and the amount of resources you have to bring together just for a single tree would make this even more tedious; even while it sounds like an interesting addition

The amount of resources by mid game for planting trees starts becoming trivial. You should have 3-4 or more compost bins (or more) at that point churning out an ever increasing quality of dirt.

That's not even hitting on water, or clay for pots. And stunting. It would also be ever more information to track per seed harvested from said trees.

This would open a market for trees and seeds in a completely different way, I think it is the unpleasant things in this game that makes it so great.
You find people to work with or trade with, specialize in something and take out the best part out of each person.
One person doing everything is impossible already for this game, except for minimalists.

Watching trees grow is about as boring it can get, I am a tree farmer / silk producer, I would love it to be a bit more work.

Mulch you can mass produce, you only need 4 boneglue and wood, then just enough carrots for it to produce mulch, this would just add an organizing factor to it.

with animals you pick two of them, and their stats are compared

but with tree you take only 1 seed

if you whant selection you need to mix something together
