For the hermit/safe mode I don't think it is worth the time/effort - maybe if we had a non-alpha game that was stable and the devs had time, but personally I would like to see them keep focusing on giving us a better game that lasts a reasonable time. IMHO hermiting is more of an end-game option for hard-cores. You should not expect to survive solo in this game, you should have to be in a village or be VERY good at this game to hermit successfully.
standalone hermit instances sounds interesting and more like the tutorial area that doesn't end.... but it should not take focus away from getting the 'real-game' into beta. (yes I know its eternal-alpha, but we all have to dream it may be a real game some day)
But what if I don't like playing in a village? not everyone wants to stay active every day and be in an alliance with other people. I don't want to play this game as a civilian, I'm not looking for a feudalism sim and i don't think many do. I like this game for it's survival aspects and advancing in skill. I played as a hermit so far but not because I'm hardcore, instead because I played casually. I don't care about being the best player or staying in the top front and honestly I don't want to invest that much time in the game just to 'stay relevant'.
I sometimes feel like the only people who are left are veterans that stayed because the game went to their direction, which is more to heavily invest time and to try your best to get high levels and grind fully as much as you can. (please correct me if you think otherwise, as I didn't have that much interaction with the community.)
But the thing is people never consider what those who played for a while and then left would have wanted, because this forum is only getting opinions who stayed.
I understand the devs' fear of adjusting to a part of the community too much and thus ruining the game for the older part, because frankly, that's how minecraft got ruined.
But judging by the amount of players i think the game did miss out having a slightly larger community without getting ruined by a flux of new players.
Otherwise I completely agree on what you said about getting to beta. getting more content is fantastic, and the game does seem to go in a good direction. Although i sometimes feel like it's focusing too much on kingdoms and battling where i'd love it to at least go a bit more in the direction of wilderness survival. ultimate thing though, it's the devs choice. It's their game and they know what they want to do with it.
Hermit only instances are an interesting direction though, maybe each player their own and maybe just a simplified game with no villages /end game and unlimited time, although I personally think I'd still rather play on the real server in that case.
