And why make sheep cheese at all? If you got sheep you get sheep milk! And I'd rather use sheep milk on nice agi cheese than some random milk food.
Just because a good food exists doesn't mean you should just eat that.
There is a place for sheep cheeses as they are in a hearthlings diet.
There are plenty of reasons not to milk sheep and make sheep cheese;
-It takes up curding tubs that could be used for cow curds
-Pregnant sheep eat a lot
-Sheeps eat more when milked
-Takes up space on racks in houses, basements and mines that could be used for superior cow cheeses
Just because you have them doesn't mean you might as well make the cheese. The investment of time vs payoff is just not worth it. The food I put in the trough to feed hungry milked and pregnant sheeps is worth more than the cheese itself, if it just takes up space on a rack for an entire 2 weeks before I see any sort of payoff. It's even better to just eat chives I find, as I would get more agility feps that way in the same amount of time.
