I be ok if the stack size doubled, or they added seed bag there wear good for like 1/4th of a barrel

I don't. Back then they were larpy, good to store a seed set in a chest and the only option to handle bigger fields - but completely sucked usability wise.
Seed stacking made them completely obsolete, imho rightfully so.

I would go a step further and say that carrots should have seeds as last stage (instead of inbetween) and introduce a last seed stage to beets and onions (as nature did through evolution) and make them only plantable from seeds (would also open the option to trade them bulk as the buyer wont be able to multiply them). Give the option to split pepper corn to stackable seeds (destroying the viability for cooking) and make these the only plantable.

I'm not against seed stacking ofc, I just liked the seed bags, they weren't efficient at the time I agree but now with other storage for the main bulk of your seeds that's not an issue. They would still be handy in your inventory for sorting seeds and I'd like them for storing my best seeds ... not having massive crop fields and thousands of 'best' ones.
Besides which you don't have to use them ... :P

It's the same sort of thing when it comes to jars ... ofc when you are crafting it is efficient to have everything in buckets in cupboards around you and I appreciate that as much as the next person but from a personal viewpoint I'd like be able to put honey, linseed oil, some of the meds, etc in jars, I'd rather open my cupboards to see rows of jars than clumpy buckets and as it's requested fairly often I'm not the only one. It is 'larpy' but this game encourages that side of you with the amount of choice you have in design and I do think you should be able to choose between efficiency and/or personal preference in appearance. :)

Could it be changed so that you keep harvesting seed crops even when your inventory is full? The seeds would drop on the ground like other crops.

I think it might also be due to Seed Despawn rate being quicker than lets say... Lettuce and pumpkin despawn rate when left on the ground, for that idea to work would need to possibly also adjust the respawn rate in order for not too much seed loss in big fields i think.

The reason we don't is because seeds are pretty transient. Will consider, however.
