Yeah I agree about ducks since there's no real way to hunt them apart from getting a horse.

With 2 people you can hunt them easily. 2 boats, opposite sides of the duck, one pushes it towards the other, whom catches it.

Also you can just push them towards land, and then go find them and snipe them like any other bird...
