This is a great idea. There are different "sorts" of callouses too. Like maybe getting pricked by enough porcupines could reasonably add a bit of a buff to sewing even? It's like playing guitar, if you do the same sort of shit over and over again until you get injured eventually you get immune to it.
Bee stings and snake bites could work this way to some degree as well.

THIS is an amazing idea and totally balances any immunity type positive debuffs. Any and all positive debuffs could very reasonably heal slowly like a Blade Kiss too. Callouses don't stick around if you stop hard work.
