The only objection i have is that "Difficulty" is too vague and needs to be explained: There's no way that a Quest that looks like "Catch a Fish, Visit a Cave, Raid an Ant Hill, Go for a Naked Swim, Wave at [Questgiver]" is
actually difficult to do. Time consuming due to having so many objectives sure, but each objective by itself is not especially difficult. Objectives in quests that require higher statistics, better equipment, and carry with it the (absolute) risk of death should be more difficult than the pleb objectives.
Toning down the rewards after performing 20+ of them from a single quest giver is a necessary thing, however it would be more interesting to make an escalation of quest difficulty prior to that happening. Quests should feel like a random storyline that leads the player on some kind of adventure; Once all of the "boring" low difficulty objectives are "told" to you, they'll get discarded (possibly
forever from that quest giver under specific conditions) in favor of the difficulties of blood and violence... And after a while the quest giver
should be trying to get you killed following their quests, instead of asking for friendly meet-and-greet.
