doesn't smell that bad actually when you burn the hair off a whole wild hog it just goes where the rest of the smoke goes. You could also use a propane blowtorch flames hot enough to break down the molecules that would make it stink.

the best smell is when the skin starts to split open and the juices dribble into the smoker ohhhweee

in the context of the game it's wasteful not to skin them. also kinda weird not to gut them.

in the context of reality most stuff i saw on the internet being prepped for spitroast was like, a skinned lamb or goat or like a quarter of beef or a pig with skin on, most lamb and goat recipes included some kind of spice rub. idk what people are doing out there as far as spitroasting largeish game.

Usually you wouldn't spitroast a whole cow its to heavy and once it starts to cook it just pulls itself odd the spit. Not saying its not done it just requires a supporting cage to be done properly and its a ton of work.
As for lamb and goat being skinned before cooked im pretty sure that's done IAW religious customs.
Also yes you removal the offal before you do anything with the carcass you can add the heart lungs livers kidneys and balls back in after if you like. Personally ide rather put the heart on a kebab so there's a snack while the main course is cooking.

Arguably the organ meats could be more well represented in general.

Ya'll are makin my mouth water. I haven't had a feast like this in... damn, I don't know when... at least since my uncle died 20 years ago. :cry:
