I have to admit, only one real problems with "you only gain FEP and Hunger when eating with a table" -system, and that's how to communicate it to a new/returning player.

It only solves one of the problems of the current hunger system, namely the problem of most methods of gaining energy ruin your hunger. It still leaves the problems of it takes tremendous effort/knowledge to eat 'correctly', while eating correctly is massively influential in gaining stats and ruining your hunger is so disastrous it's often faster to just commit suicide and start over than to try to fix it. It would still be an improvement over the current situation but I think a broader (not necessarily more complex) overhaul is needed. Toning down the impact of hunger would solve all three problems, because that's the root cause of the problem. Anything else is just a band-aid fix.

The devs already don't communicate anything to new players and they're never going to

Nonsense. New characters get a tutorial nowadays that at least covers the basics. Hafen is a lot easier to get into than Legacy.

One of the issues for me and the tutorial is there's usually a step or two that I don't naturally do early on (eat to 8k+ energy I think?). And by the time I do, the other tutorial activities are out of the way so I never bother.

Also you're better of saving first 6 birch bark for backpack, then crafting a kuksa only because it gives you some LP and use wooden cup or bucket instead.
