Great addition and would make the freedom to create awesome and beautiful places even greater :3
I'd go ahead and add "special canal tiles" to it - just like when extending a wall you can opt to place a corner post, gate, etc... When extending canals we could get the option to add nice bridges, fishing/rowboat docks and such

was thinking more of a building a wall approach with a few restrictions than fluid logics.
