Color (and density) of smoke could be used for that, so one would see when the goods are done without having to peek inside. Different timer durations wouldn't be an issue then, given the time between well done and ash being long enough.
Also firing while baking could mess up the baking goods (as of the black smoke from the wood), but that wouldn't be bad should (at the same time of this being introduced) the ovens get a smoking mechanic (for sausages, ham, pulled meat, smoked fish and whatnot).
