My friend has a similar average (plays very late NA time). Some days, due to people making a couple pearl necklaces, more pearls get dumped into the pool. Boiling off hours gives you a better chance of being the one to get the pearl when it hits the pool as there's a slow drip of pearls into the pool over time.
Overall the system seems to benefit people who play in off peak hours too much.

Personally never got a single pearl without using a pearl bot, which actually got me a decent amount of pearls. Wish botting wasn't so good. Dunno how hacks would be detected lol.
