How is character growth not infinite? OK, you capped combat stats (at too high a level IMO), but there's no such thing as enough farming.
Anyway, this isn't a binary issue where you either care or you don't care about your character, it's a sliding scale of how much you care about your character. And I think with infinite stat growth the slider is too far into the caring territory.
As for making characters more than an assortment of stats that's a great idea, right up there with world peace
