I'm for more of all kinds of fermented beverages in general. Mead, cider, and non-grape wines would add a lot more variety.

I guess what I really would like to see is the variety of beverages be relative to the amount of different kinds of foods. There doesn't necessarily need to be a ton of beers, I'd even be happy with 3-4 kinds. I'm actually more surprised cider and mead aren't already in the game. My idea of more beers in the game just comes from my personal preference.

I envision meadmaking as follows:
You need:
-Honey (from the future convoluted process of beekeeping).
-Water (from the easy process of getting water from a body of water or a well).
- Various ingredients
-An open container.
-A closed container (a demijohn for instance).
-Bottles
-Corks
-Time

1. First boil water.
2- Add the water to an open container (bucket or an open barrel).
3. Let the water cool to a luke warm temperature.
4. Add honey.
5. Mix it up.
6. Let it sit open for two days. (This will make it possible for yeasts to invade the mix). If you leave it too long it will turn into crap. Too short and it will not be properly invaded).
7. Stirr the mix a bit more to oxygenate the mix.
8. Transfer the mixture to the demijohn. Make sure the air in the demijohn is allowed to escape, but not get into the demijohn.
9. Store for 2 weeks in demijohn. Transfer the contents to corked bottles.
10. Store for 2 years.
11. Drink.
12. Bonus from mead. I don't know.

There must be alot of smaller breweries in the USA that makes mead.
