At the moment, lettuce is of little use because beetroots offer "salad" ingredient. They're decent filler food but possibly not worth the effort in their current stage.

Lettuce in many ways is like cabbage. It can be raw, fried, pickled, and used in soups. It is a very old filler and before modern science removed most of its helpful vitamins and minerals was a good supplement. I'm all for more uses for it.
