Why does Sheep Cheese take so much longer to transition stages than Cow Cheese for cheese that isn't even as good? It should be the same or if anything faster, since the cheese is more dex and csm oriented, both stats that are easy to raise.

Creamy Camembert is one stage that takes less time than one stage of sheep cheese. The agility sheep cheese (the one after Feta, whatever) takes 2 stages, both of which take longer than 1 stage of cow cheese. Why would I ever not just make Camembert? Why would I ever not just make BBC?

If you're saying a stage of Sheep Cheese takes less or the same amount of time compared to Cow's Cheese, you're wrong. It takes waaaay more time, which is why it's mostly not worth it.

The statement was that sheep cheeses are shit which is simply not true. You can compare foods all you want but by no means is it a shit food.
And why make sheep cheese at all? If you got sheep you get sheep milk! And I'd rather use sheep milk on nice agi cheese than some random milk food.
Just because a good food exists doesn't mean you should just eat that.
There is a place for sheep cheeses as they are in a hearthlings diet.
