Currently the only way to kill most stuff is by trapping them or on a horse, as most of the mobs flee at sprint speed.

This is nonsense, unfun, bad, universally hated by the players and thus pointless bullshit. End it now.

Nerf them all one speed level when they're fleeing, or give them a stamina bar that is exhausted after 1/2 map tile for them to slow down one level then.

This. Either give animals a fleeing stamina bar or make bleed damage kill the animal after they flee so we can track the blood to a dead animal

tbh even bleed damage killing it is annoying because u just lose the combat discovery

Yeah I really don't understand how this is still a thing.
It never made sense to begin with having INJURED animals running mach 1 away.

I think the best and most logical thing would be to make most animals have some sort of enrage, a desperate attempt to stop you. Kinda like bears but yknow...without the damn running. (I dunno if other animals already have enrage since I only ever boat hunted so I could actually catch animals). I think the only sprint retreating should be horses since it makes some sense that they would flee instead of fight.

Which is a completely other building yard, as horse hunting needs a slight nerf. But that's for another time.

They, at times, turn from fleeing back to attacking you. Which is a good thing, unless you can't reach them while they flee.

I agree that the current hunting system is horrible, it literally encourages cheese tactics because if you don't trap the animal by taking advantage of dumb AI you're not going to kill it, unless it's a boar.
While it won't be long now until everyone has a horse and can chase stuff down, there really should be a viable non-cheese way to kill stuff without it just running off the second you start dealing real damage.
