We need a use for misc. poultry

Currently mallard & swan meats have no particular use outside recipes that call for generic meat. It would be nice to have a recipe that used them specifically, or recipes that used any poultry, both for variety's sake and as the poultry subcategory is currently woefully underrepresented in crafting recipes. My initial thought was perhaps modifying chicken chorizo to accept variable ingredients & renaming it, though it might be better to flesh out the poultry subcategory instead.
