As loftar said, magically just knowing how many coins there are does not sound that cool.
If coins had dates when they were minted, which is quite realistic, it would still provide tools for players to check on inflation and things. "Central banker" could make the dates and amounts of when coins were minted public, to increase his credibility.
Then one could observe the coins in circulation, and find out whether the banker is telling the truth. (If lots of coins made on day X appear on circulation, even though the banker did not mint many coins, or coins at all on that date, something fishy could be going on)
Current system with just completely blind trust is stupid too!
Maybe there are some technical problems though. Like saving date to each coin and how they would work if you merge coin stacks minted on different dates and so on...
