Make it so when you castrate an animal there is a chance they will attack you. I don't think any conscious animal would be happy about having their family jewels removed.

That would be realistic, but inconvenient. Castration in general seems to be bit hastily implemented. I think not getting a bollocks when butchering un-castrated animal still has not been fixed.

See, actual gelding/castration is usually done by binding the testes so that they wither and die due to blood deprivation - so it is not as if the current implementation is accurate anyway.
And if I had to risk fighting my own already tamed animals just to castrate them... I'd just start slaughtering them instead of gelding them - So unfortunately I think your idea would actually just make the castration mechanic almost entirely unused.
