Barter/Trade Stand Multiple Input Options

there are a number of recipes that require a category of items, such as "any mushroom", so if i'm looking for mushrooms for Mushroom Burst Glutton, I'd like to see barter/trade stands offer the same option when purchasing. for example, I can set my offer and select a mushroom from my inventory as my price, then i can select between requireing that specific mushroom or any mushroom.

If this is already an option, PLEASE let me know how to set it up.

Have not tried with mushrooms, but generally that's how barter stand works.

I would not 100% surprised if it depends on what exactly is the item/category though...

As far as I recall, you just select a mushroom in your inventory as input item and then the barter stand asks you whether you mean 'Mushroom X', 'Any mushroom' or 'Forage' (or whatever categories the item belongs to). You then just select the category you want and it will accept that as input.
