Why it's a special item in the game while there is nothing special about it according to the game mechanics? Are we supposed to keep those in a cupboard to remind us of how cruel we were to our animals?

Make it a curio at least. Or part of some awkward ritual or medical recipe...

It very much is something special.
A example- a meatpie with regular horsemeat would have 20~ FEP's total.
If you used bollocks, it'd have 40, if not 50 total FEP's.

I tried most of the meat recipes with bollocks and they're mostly great. The ONLY meat where you could argue that the meat is better than the bollocks is Pork, depending on what stat you want.
I'm still saving up for a horsebollock kebab, the sheepbollock kebab is shit.
