Let me give you another answer, a reality-based one. Not all trees in RL have 'boughs' as they're meant here. Alder happens to be one of the few deciduous trees suited for thatching and the other purposes that boughs are turned to. Evergreen boughs (Yews, Firs, Spruce, Etc) are the best source of these across the board, they pretty much just universally "work", with the exception of Pine which just doesn't have the necessary density.
What we SHOULD see for thatching is Cattails, which are actually used very commonly in the rough period this game is set in. They would be suitable for thatching as well as making woven rugs, new chairs, that sort of thing. I'd much rather see us have more options for thatching from things that make sense, than just blanket 'all trees can bough'.
