Different animals nodes overlaps each other and because there is MORE animals, You see MORE animals than You would see in legacy, because legacy had just less possible spawns.

Back in legacy animals were more scarce, you could boat for half an our and find nothing else but two boars. Due to it, animals like bears or deers were also used in trades.
Also, I remember how some people wanted to make wolfs more aggressive and stuff, because despite of how much animals there is "Experience players can still avoid them easly".

I don't even think about removing these animals, just lower the frequency they spawn with.
Yeah, wouldn't that mean there is less animals You see in legacy because there is less of those?
Lower the frequency and nobody beside most active players will be able to hunt. Especially nodes that even lower players could use with benefit of trading.
Or maybe you live in some sort of no-player area if they spawn so frequently for You, because for me, clearly not that frequently.
