Back then? Experienced miners sometimes tried to use a "sixth sense" about such things. Given the time it took to dig a new tunnel to a "potential vein of ore," a miner could spend their entire life proving themselves right or wrong. (Given the lifespan of a laborer in the iron age was probably around 30-35 years, and miners typically less than other laborers...)
Today core sampling is done to try to figure out where to dig or entire mountains are strip mined for ore. Neither was possible in iron age technology.
