Roast meat is indeed awful but, Butcher's Surprise is more offensive because of how much you need to make it by comparison. You need hard metal, sausage making, intestines and two meat where as roasted meat you just need one meat, hunting and a fire which you can have minute one of gameplay.

Butcher's surprise was the first experiment of implementing variable food to the game. As many other things that was implemented to test some new mechanics in the game, it is exists just because it does

Because it gets a lot better as the quality rises. If you're making your sausages q10, you're doing it wrong, and Butcher's Surprise makes it even easier to reach at least q40 for double the FEPs. It still has a bad FEPs/hunger ratio, but for a lot of meat you won't find a much better use other than kebab.
