Just move winter to mountains.

It is the best solution for winter problems. Spring, summer and autumn are not bad. They do not broke map, you can dig for clay, dirt meanwhile you can go to forest for some goods: blueberries, mushrooms etc. Mountains with snow will get more value and you can put all winter things on snowed mountains. I think is the best solution for winter.

Winter is fine as a concept, it just needs a little bit more work. We'll get there eventually, but it's not that terrible as of now to completely remove the season altogether

wolves, reindeer, lots of adders are under my home in forest btw.
I found some mammoths not on mountains biom.
