Here is some examples how this can be resolved:

1. Manually find most convenient values for different type actions. For example building trellises requires bigger value, but playing with big placegrid value will be invonvenient for other buildings. So people will just change modes for their needs.

2. Also devs can collect statistics of people values for placegrid, find lower quartile, median and upper quartile.
Add them as 3 possible checkboxes, so people will be able to setup one of most used values for different build

Also, can be enables as just a slider.
Anyway, people will be able to override value with console

? Not sure what's on your mind here.
"most convenient values" is still a subjective thing. Direct manual (console) input has no such potential limiting issues.
Binding some user-preferred console commands to hotkey comes to mind, but the game already has its fair share of possible hotkeys to remember.

Sure. Although I think the current general slider implementation in the HnH client kinda sucks.

Good documentation might be less work, and easier to update when needed (for dev's), for some of the current available console stuff, than to try to capture them in some UI design.
(And definitely not for all, as OP was mindlessly chanting)
