in a rare event a farmer could get a crop aesthetic variation: crop size or color would change a little

farmer then could choose to pursue that crop mutation and see where it goes

with time each farmer could have a special looking field of barley or flax

While I agree it is really great to having traits to growth of plants, for technical reasons it's pretty annoying to do. And we already had this system, trinary quality. Every quality having thing had three different qualities. And well it not only didn't work out, it was god damn annoying.

Here's a guide to botany with a direct link to mutations section from a game that made them well for round based gameplay.

Edit:

I have a really fucking great idea tho! Alchemy for crops! And adding some really weird crops that require alchemical ways to grow. Like evolving plants overtime, like it happened to potato, banana, and watermelon. There could be a base ingredients like red apple, or grapes. And they could be turned into stuff like green apple, purple grape, green grape. And they would require a special water made with alchemical ways just to plant. And as alchemy goes, the potion might not turn out well.

i know, I suggested a "rare aesthetic mutation", that is, a cosmetic mutation for larping purposes (color/size)

making it rare would avoid annoyance and possibly create value
